How to Prepare Orzo Stuffed Sweet Potatoes [Vegan]
- Preheat oven to 425°F. Poke holes in potatoes with a fork and roast in a baking dish for about 45 minutes until tender, longer for larger potatoes.
- Cook orzo by boiling, as per package directions.
- Toast nuts in a dry pan, or in the oven.
- Heat oil in a skillet over medium heat and sauté onion about 3 minutes. Add spinach and cook another 5-7 minutes.
- Stir in the cooked/drained orzo and season with salt, pepper and a pinch of fresh nutmeg. Add orange zest, cranberries and nuts.
- When the sweet potatoes are tender, slice down the center of each, and fold open. Place spoonfuls of orzo over each potato.
- Serve hot.
