Ingredients

  • 2 1/4 cups shredded coconut , fine
  • 1/4 cup cacao powder
  • 1 teaspoon vanilla bean powder or 4 teaspoons vanilla extract
  • 1 1/2 cups medjool dates
  • 1 pinch salt

Preparation

  1. Put coconut, cacao powder, vanilla and salt into a food processor and pulse briefly to mix.
  2. Add the pitted dates and process until the dates are finely chopped and the mixture starts to clump.
  3. Press into cookie shapes using a cookie cutter or egg ring.
  4. Dehydrate at 105-115°F for 3 hours (or until firm on the outside).
  5. Flip over and dehydrate for another 3 hours, or until they reach the desired texture.
