The base of these bars is made with melted cookie butter (cookie butter is a spread made out of crushed spiced biscuits) and graham crackers and it’s topped off with even more cookie butter and melted chocolate. Don’t have cookie butter? No problem! You can substitute your favorite nut or seed butter and the results will still be fabulous.

No-Bake Cookie Butter Bars [Vegan]



For the Base:

  • 1 cup vegan butter
  • 1 cup smooth cookie butter
  • 1 teaspoon pure vanilla extract
  • 2 cups crushed vegan and honey-free graham cracker crumbs
  • 1 cup powdered sugar
  • 1 cup granulated sugar

For the Topping:



  1. Line a 9x9-inch baking dish with parchment paper. Set aside.
  2. In a small saucepan over low heat, melt together the butter and cookie butter. Stirring constantly until smooth. Remove from the heat and stir in the vanilla extract, graham cracker crumbs and sugars. Stir until well combined. Spread mixture into the bottom of the prepared dish and press the top with a rubber spatula (or your hands) to even everything out.
  3. For the topping, melt together the chocolate chips and cookie butter in another small saucepan over low heat. Pour over the bottom layer. Place in the fridge for about 20 minutes or until the chocolate is completely set.
  4. Slice into bars and enjoy!
