  • 1 cup cashews

How to Prepare Maple Ice Cream [Vegan]

  1. Blend all ingredients in high powered blender until smooth. Chill in refrigerator for 2-3 hours until well chilled.
  2. Pour mixture into ice cream maker, following manufacturer instructions.

  1. Just made this yesterday, and it worked out great! I DID soak the cashews for a few hours as suggested below, and added a 1/2 tsp of xantham powder (my usual trick from keeping ice cream for getting too much of a frozen texture). I also added in some chopped walnuts at the end of the ice cream maker\’s cycle to make the New England classic flavor "maple walnut". I think the maple flavor is even stronger today than yesterday for some reason, but I love it! FYI I used a "Grade B" syrup because it has a stronger flavor.
