These maca blueberry pops are basically smoothies in popsicle form! These, in particular, are made from a mix of blueberries, strawberries, coconut milk, and superfoods like maca powder and chia seeds. Energizing dessert, for the win!
Maca Blueberry Pops [Vegan]

Ingredients
For the Pink Layer:
- 1 cup light coconut milk or any non-dairy milk
- 1 cup strawberries, fresh or frozen
- 1/2 tablespoon maple syrup
- 1/2 teaspoon maca powder
For the Purple Layer:
- 1/2 cup light coconut milk or any non-dairy milk
- 3/4 cup blueberries
- 3 tablespoons chia seeds
- 1/2 tablespoon maple syrup
- Shredded coconut, optional
Preparation
- In a blender, blend all ingredients for the pink layer until smooth. Pour the mixture into 8 popsicle moulds. Set aside. Rinse the blender.
- Now blend all ingredients for the purple layer until smooth. Pour this mixture over the pink layer. Using a popsicle stick, swirl the purple layer a bit so it creates a swirly effect with the pink layer. Sprinkle a layer of shredded coconut over each popsicle. Insert the popsicle sticks.
- Freeze for 4-5 hours or until frozen.
