    Key Lime Pudding [Vegan]

    This easy make-ahead chia pudding has been a huge hit with my taste and recipe testers.  It’s creamy and refreshing and super satisfying, with a vibrant burst of lime.

    Ingredients You Need for Key Lime Pudding [Vegan]

    • canned coconut milk (light here, or full-fat), 1/2 cup to full can, adjusted to desired consistency (see note below*)
    • 1 1/2 cups plain (or lime) non-dairy yogurt
    • 1 teaspoon pure vanilla extract
    • juice from 2 regular limes or 4 key limes, adjusted to taste (note: zest before juicing)
    • handful of baby spinach (optional, for colour)
    • 1/4 cup Lakanto sugar-free Maple or pure maple syrup, adjusted to taste
    • pinch of salt
    • 1/2 cup chia seeds
    • zest from 2 limes or 2 key limes, adjusted to taste
    • optional toppings: berries, lime slices and/or zest, granola, or toppings of choice

    How to Prepare Key Lime Pudding [Vegan]

    1. Put coconut milk, yogurt, vanilla, lime juice, baby spinach (if using), sweetener, and salt into a blender container and blend well.
    2. Add the chia seeds and pulse-blend just to combine.  Whisk in lime zest.
    3. Pour into a bowl or single serving mason jars and whisk or cover and shake.  Allow to sit for 10 minutes, then whisk or cover and shake again.  Cover and refrigerate overnight.
    4. In the morning, stir and add additional sweetener, zest, and/or milk as needed for desired taste and consistency.  Serve cold with your choice of toppings.

    Notes

    Note: If the yogurt is thin, only 1/2 to 1 cup of coconut milk will be needed. For extra-thick yogurt, add the full can. After a few hours, you can adjust the consistency if needed by adding some additional milk or chia seeds.
