How to Prepare Hearty Heartful Ratatouille [Vegan]
- Preheat oven to 425°F.
- Drizzle half of olive oil onto large baking sheet.
- Spread out separately on pan the eggplant, zucchini, peppers and squash. Place onion and tomato halves in corner of pan.
- Drizzle remaining olive oil on top of vegetables, season with salt and toss.
- Roast eggplant for 25 minutes, then remove.
- Roast peppers for an additional 10 minutes, then remove.
- Roast zucchini and yellow squash for an additional 10 minutes, then remove.
- Place tomato puree in saucepan and reduce over medium-low heat until thickened. Toss all ingredients together and check for seasoning.
- Savor every bite!
