    Ingredients You Need for Hearty Heartful Ratatouille [Vegan]

    • 1/4 cup olive oil
    • 1 eggplant, cut into large 1 1/2” chunks
    • 2 zucchini, cut into large 1 1/2” chunks
    • 1 large yellow squash, cut into large 1 1/2” chunks
    • 1 red pepper, cut into large 1 1/2” chunks
    • 1 yellow pepper, cut into large 1 1/2” chunks
    • 1/2 yellow onion
    • 1 small tomato, halved
    • 1 tablespoon salt
    • 1 teaspoon dry oregano
    • 1/2 cup fresh basil, chopped
    • 1 cup crushed tomatoes
    • 1/4 yellow onion, thinly sliced
    • 1 tablespoon lemon zest

    How to Prepare Hearty Heartful Ratatouille [Vegan]

    1. Preheat oven to 425°F.
    2. Drizzle half of olive oil onto large baking sheet.
    3. Spread out separately on pan the eggplant, zucchini, peppers and squash. Place onion and tomato halves in corner of pan.
    4. Drizzle remaining olive oil on top of vegetables, season with salt and toss.
    5. Roast eggplant for 25 minutes, then remove.
    6. Roast peppers for an additional 10 minutes, then remove.
    7. Roast zucchini and yellow squash for an additional 10 minutes, then remove.
    8. Place tomato puree in saucepan and reduce over medium-low heat until thickened. Toss all ingredients together and check for seasoning.
    9. Savor every bite!
