I love leeks and I love to grill pretty much any vegetable I have in the fridge. When you add the vegan feta cheese, you make this a perfect entrée.

How to Prepare Grilled Leeks with Vegan Feta Cheese [Vegan]
- Clean the leeks by removing the ends and the first 3 or 4 layers. Boil the leeks in salted water for 10 minutes.
- When they are fully cooked, drain them and squeeze out as much water as possible.
- Grill the leeks on a hot cast iron grill (if inside) or on your outdoor grill until a few grill marks appear.
- Crumble a quality feta cheese and set aside.
- Arrange the grilled leeks on a serving plate and drizzle a generous amount of extra-virgin olive oil; add salt (or salt flakes if you have them) and pepper.
- Sprinkle the vegan feta cheese uniformly all over the leeks and sprinkle the finely minced fresh herbs and lemon zest. Enjoy warm with some good bread or crostini.
