French toast one of the greatest ways to do brunch and this recipe just made it better — and it's so easy to make! Bread is stuffed with chocolate and peanut butter, rolled up, and then grilled. They're like amplified French toast stick, so you'll definitely want some maple syrup for dipping.

French Toast Rolls With Peanut Butter and Chocolate Filling [Vegan]



For the French Toast:

  • 6 pieces of bread
  • 2 tablespoons soy milk
  • 2 teaspoons sugar
  • 2 teaspoons cocoa powder
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground flax seeds
  • 5 teaspoons water

For the Peanut Butter Chocolate Filling:

  • 8.4 ounces peanuts (or storebought peanut butter)
  • 2 teaspoons sugar
  • 3 teaspoons cocoa powder


  1. Mix the flax and water and let it stand for 10 minutes.
  2. Cut off the edge of the bread from all sides. Then, roll it out with a rolling pin very flat.
  3. Add the peanuts, sugar and cocoa powder in a blender and mix until a creamy consistency is achieved. Or, if using storebought peanut butter, you can skip the blending step.
  4. Now fill the rolled-out bread with peanut butter. Then, carefully roll together.
  5. Mix the remaining ingredients together and dip the toast rolls in it.
  6. Heat a nonstick pan with a little oil and toast for 1-2 minutes until they are golden brown.
  7. Garnish with melted chocolate and powdered sugar.
