  • 1 cup dry quinoa
  • 1 15-ounce can of low-sodium tomato sauce
  • 1/2 of 1 small white onion, chopped small
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin powder
  • 1 1/2 teaspoons Southwest Chipotle seasoning
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil
  • Minced garlic (optional)
  • Chopped peppers or jalapeños

Preparation

  1. First, cook quinoa in advance according to instructions.
  2. In a skillet, add the tomato sauce, chopped onion, all the seasonings, and olive oil. Add the minced garlic and chopped peppers, if you choose to. Cook on medium-heat until it starts to bubble slightly, about 5 minutes.
