Cookies can make one temporarily insane, that's well known. But a banana-whole wheat-chocolate-vegan cookie? Come on. You don't even have to feel bad about eating a whole bunch of these!

Double Chocolate Whole Wheat Banana Cookies [Vegan]

Ingredients

  • 1 cup raw sugar (scant)
  • 2 large bananas, ripe and mashed--preferably pre-frozen
  • 3/4 cup canola oil
  • 1/2 cup almond milk
  • 2 tablespoons tapioca flour
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 1/2 cups whole wheat flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 1/2 cups dark chocolate chips

Preparation

  1. Mash the bananas well and add the sugar and oil. Mix well until it's caramel-esque in appearance. Then add everything else. Add the chips last
  2. Scoop onto pre-greased cookie sheets or sheets lined with parchment paper with a 2 tablespoon cookie scoop. No need to flatten down.
  3. Bake at 350°F for 8 minutes. Allow them to sit on the racks for at least 5 minutes after coming out of the oven. Rack to cool.
