Ingredients

For the Falafel Crust:

  • 3/4 cup cooked chickpeas
  • 1/3 cup millet, oats, or flour
  • 1 small red onion
  • 1 cup fresh mint
  • 1 cup fresh coriander
  • 2 cloves garlic
  • 3 tablespoons tahini
  • 3 tablespoons ground chia or flax
  • 2 tablespoons cumin
  • 2 tablespoons coriander powder

For the Beet Hummus:

  • 1/2 cup cooked chickpeas
  • 1 small beet, boiled
  • 2 tablespoons tahini
  • 1 cloves garlic
  • Oregano, basil, and other herbs, as desired
  • Sliced vegetables, as desired

For the Tahini Cheese Sauce:

  • 2 tablespoons tahini
  • Nutritional yeast, to taste

Preparation

  1. Preheat oven to 390°F. Line a cake pan or deep pie dish with baking paper.

To Make the Base:

  1. In a food processor, pulse all crust ingredients, until all ingredients are very combined and have become little pieces.
  2. Spread on the bottom and lower sides of cake pan/pie dish. Bake in oven for 20 minutes

To Make the Beet Hummus:

  1. In a food processor, pulse all ingredients, until smooth.
  2. Remove the beet hummus, add the sliced vegetables to the hummus, and mix
  3. When the falafel crust is dry to the touch, remove from oven.
  4. Pour the beet hummus on top of the crust and return to the oven for around 40 minutes.

To Make the Cheese Sauce:

  1. Mix all ingredients together and drizzle on top of pizza when it has finished baking. Slice and serve.
