For the Croquettes:
- 1 cup potatoes, boiled and mashed
- 1 cup broccoli, blanched and chopped
- 2 tablespoon beet purée
- 1 tablespoon cumin seeds
- 1 tablespoon dried mango (amchur) powder
- 1 teaspoon garam masala
- 1 teaspoon chaat masala
- Salt, to taste
- 2 tablespoon green chili, chopped
- 1 tablespoon ginger-garlic paste
- 1/4 cup bread crumbs
For the Crust:
- 1/4 cup bread crumbs
- 1/4 cup sesame seeds
- Olive oil, to drizzle
How To Make Crispy Curried Broccoli and Beet Croquettes [Vegan]
- In a mixing bowl, add the broccoli, mashed potatoes, beet purée, cumin seeds, amchur powder, garam masala powder, salt, green chilis, and the bread crumbs and mix them together.
- Divide the mixture into 18-20 equal balls and roll each one into a short sausage shape.
- Preheat oven to 350°F.
- Put the bread crumbs and sesame seeds in a bowl and mix them well.
- Roll the croquettes in the mixture of breadcrumbs and sesame seeds.
- Place them on a parchment-lined a baking tray and drizzle/ spray generously with olive oil.
- Bake in the oven for about 20-22 minutes, or until golden.
