What Ingredients Do You Need To Make Crispy Curried Broccoli and Beet Croquettes [Vegan]

For the Croquettes:
  • 1 cup potatoes, boiled and mashed
  •  1 cup broccoli, blanched and chopped
  • 2 tablespoon beet purée
  • 1 tablespoon cumin seeds
  • 1 tablespoon dried mango (amchur) powder
  • 1 teaspoon garam masala
  • 1 teaspoon chaat masala
  • Salt, to taste
  • 2 tablespoon green chili, chopped
  •  1 tablespoon ginger-garlic paste
  • 1/4 cup bread crumbs

For the Crust:

  • 1/4 cup bread crumbs
  • 1/4 cup sesame seeds
  • Olive oil, to drizzle

How To Make Crispy Curried Broccoli and Beet Croquettes [Vegan]

  1. In a mixing bowl, add the broccoli, mashed potatoes, beet purée, cumin seeds, amchur powder, garam masala powder, salt, green chilis, and the bread crumbs and mix them together.
  2. Divide the mixture into 18-20 equal balls and roll each one into a short sausage shape.
  3. Preheat oven to 350°F.
  4. Put the bread crumbs and sesame seeds in a bowl and mix them well.
  5. Roll the croquettes in the mixture of breadcrumbs and sesame seeds.
  6. Place them on a parchment-lined a baking tray and drizzle/ spray generously with olive oil.
  7. Bake in the oven for about 20-22 minutes, or until golden.
