Ingredients You Need for Creamy Pumpkin Risotto [Vegan, Gluten-free]

  • 2 tablespoons olive oil
  • 2 shallots, minced
  • 1 cup Arborio rice or short grain brown rice
  • 1/2 cup dry white wine
  • 4 cups vegetable stock
  • 1 cup pumpkin purée
  • 1/2 teaspoon fresh rosemary, chopped
  • 1/2 teaspoon sea salt
  • 2 tablespoons nutritional yeast

How to Prepare Creamy Pumpkin Risotto [Vegan, Gluten-free]

  1. Heat the olive oil in a large saucepan over medium heat and sauté shallots until they are fragrant.
  2. Add in the rice and it sauté the mixture for about 5 minutes or until it's translucent.
  3. Add the wine and stir until it is all absorbed.
  4. Add the broth in 1 cup at a time while stirring the pot occasionally until all the liquid is absorbed.
  5. Stir in the pumpkin, seasonings, and the last cup of broth and then cook the rice until it's creamy and all liquid is absorbed.
  6. Stir in the nutritional yeast and garnish the dish with fresh parsley before serving.

Notes

Arborio rice is classic to use for risotto. Short grain brown rice may also be used, but the cooking process may take a bit longer.
