How to Prepare Coconut and Almond Clusters [Vegan]
- Preheat the oven to 356°F (180°C) and line a tray with parchment paper.
- Spread the rolled coconut in an even layer and bake for 10-15 minutes until crisp and lightly golden. Re-spread the coconut with a fork at least once in between. Watch carefully to ensure it does not burn. Transfer to a large bowl and with your hands break up the flakes roughly.
- Bring the coconut oil, almond butter and agave to the boil and let it cook until it starts to boil. Remove from the fire.
- Add this preparation while still hot to the laminated coconut and mix everything.
- On a tray lined with parchment paper, place the pieces of the preparation and shape them into nests (it helps to make them with your hands).
- Once the nests are made, melt the coconut oil and chocolate in small pieces in a bain-marie or microwave.
- Decorate the nests with this melted chocolate.
- Place the almonds inside the remaining melted chocolate (think 2 or 3 per nest) and once wrapped in the chocolate place them over the nests.
- Place the tray with the nests in the fridge for about 4 hours.
- Serve and store any leftovers in the fridge.
