Ingredients

  • 5 big dried figs
  • 1/4 cup, plus 3 tablespoons pumpkin seeds
  • 4 big dried apricots
  • 1 teaspoon cinnamon
  • 1 teaspoon dried ginger
  • 2 tablespoons coconut oil

Preparation

  1. Place the pumpkin seeds in a food processor and blend until they resemble a flour. Add the cinnamon and ginger and pulse for a couple of seconds. Blend in the apricots and figs and make it all stick together by adding in the coconut oil.
  2. Press out into a square container and refrigerate for 1 hour.
  3. Cut out into bites and serve.
