Chocolate and coconut go so well together, that we decided to turn them into a gooey, delicious treat that's easy to make and addicting to eat!

Chocolate Coconut Gooey Goodness Bars [Vegan]


Cooking Time




  • 1 3/4 cup raw coconut meat
  • 1/4 cup dried organic unsweetened cranberries
  • 1/2 cup raw sunflower seeds
  • 1/2 cup quinoa flakes
  • 20 Medjool dates
  • 2 tablespoons carob/cocoa powder
  • 1/4 cup dried organic unsweetened cranberries
  • 1/4 cup mixed seeds (sesame, sunflower, and pumpkin)
  • 1 80 percent dark chocolate bar


To Make the Gooey Base:
  1. In a food processor using a "grating" blade, process the coconut meat to a fine shred.
  2. Place the shredded fresh coconut meat in a large mixing bowl and set aside.
  3. Place all "food processor" ingredients in food processor. Blend until it starts to form a "dough" like ball.
  4. Add "dough" like mixture to the coconut meat and mix well.
  5. Once well-combined mix in the whole dried cranberries and the seed mixture.
  6. Line an 8x8-inch pan with wax paper and flatten dough into a pan. Place in the freezer.
To Make the Chocolate Topping:
  1. Place the vegan dark chocolate in a small pot and melt down - make sure you keep mixing as it melts so you don't burn it.
  2. Pour the chocolate layer over the gooey base mixture. Sprinkle lightly with cinnamon and freeze until ready to serve.
