Ingredients

  • 1/4 Cup Brown Sugar
  • 2 tablespoon Organic Cane Sugar
  • 1 Vegan Egg
  • 1/4 Cup Maple Syrup
  • 1 teaspoon Vanilla
  • 1 Cup Vegan Butter 
  • 1 Cup Cassava Flour
  • 1 teaspoon Baking Soda
  • 1 Cup Vegan Chocolate Chips

Preparation

  1. Preheat oven to 350ºF.
  2. In a large bowl, combine brown sugar, organic cane sugar, vegan egg, maple syrup, and vanilla.
  3. Beat well with a hand mixer.
  4. Add in vegan butter.
  5. Beat again until well blended.
  6. Add in remaining dry ingredients - cassava flour,  and baking soda.
  7. Mix together with a wooden spoon.
  8. Add in a little more flour if needed until the consistency of traditional cookie dough.
  9. Scoop out cookies with two spoons and place on a ceramic non-stick baking sheet. Flatten if desired.
  10. Bake at 350ºF for approximately 10 minutes. Check beginning at 8 minutes and pull out when tops are golden. Time will be 8-12 minutes.
