    • 12 medjool dates, pitted
    • 1 cup frozen raspberries
    • 1 tablespoon chia seeds
    • 1 cup vegan dark chocolate chips
    • Crumbled freeze-dried raspberries, optional for topping

    How to Prepare Chia Raspberry Stuffed Dates [Vegan]

    1. Place the raspberries in a small microwave-safe dish and cook in the microwave for 2 minutes until thawed and a little warm.
    2. Stir the chia seeds into the raspberries and set aside for the mixture to thicken.
    3. Cut a slit longways in the top of the dates.
    4. Stuff each date with 1 1/2 teaspoons of raspberry mixture.
    5. Place dates in the fridge for an hour to firm up.
    6. Melt chocolate chips in a microwave-safe dish 30 seconds at a time stirring in between until the chocolate is smooth and fully melted.
    7. Use a toothpick and dip each date into the melted chocolate and place on a parchment-lined plate or baking sheet.
    8. Sprinkle with crumbled freeze-dried raspberries, if using.
    9. Let dates sit in the refrigerator for 1 hour or until chocolate is firm before serving.

    Notes

    The stuffed dates will keep in the refrigerator for a week.
