3 Ingredient Cherry Pistachio Energy Bars [Vegan]

Ingredients

  • 1 cup shelled pistachios
  • 1 cup dried cherries
  • 1 cup whole, pitted dates (12-15)

Preparation

  1. Place all ingredients in a food processor and pulse until broken down. Blend for about a minute, or till mixture starts to clump together. Scrape down the bowl and blend again until the mixture forms a ball (1-2 minutes more).
  2. Using slightly damp hands,  press into a parchment-lined 8x8 pan and chill overnight (this will create rather thin bars. For thicker bars, use a 9x5 or 8x4-inch loaf pan).
  3. Cut into bars or squares (alternatively, you can shape the mixture into balls and refrigerate till firm). Store covered, in fridge for a few weeks.
