These cashew chocolates are absolutely delicious and super easy to make. The cashew filling is nutty, rich, and smooth and the chocolate coating is decadent and sinfully tasty. These chocolates are great to put out when company is around and also make a great gift.

Cashew Butter Chocolate Bonbons [Vegan, Gluten-Free]



For the Filling:

  • 3-ounces cashew butter
  • 1 and 1/2-ounces pitted dates
  • 2 tablespoons maple syrup or agave syrup
  • 1 tablespoon coconut oil at room temperature
  • A pinch of fine salt
  • 1/2 teaspoon vanilla extract

For the Chocolate Coating:

  • 2 3/4 tablespoons cocoa powder
  • 1/3 cup, plus 2 3/4 tablespoons coconut oil
  • A pinch of fine salt
  • 1 tablespoon agave nectar
  • 1/2 teaspoon vanilla extract


  1. Blend all the filling ingredients into a homogeneous paste.
  2. Taste the filling and sweeten as needed.
  3. Set it aside.
  4. Mix all of the ingredients for the chocolate coating together until they are well combined.
  5. Use silicone candy molds and in each hole of the mold,  place a spoon coating in each mold.
  6. Freeze them for 10 minutes.
  7. Remove them from the freezer and, in the center of each hole, place a spoonful of the filling.
  8. Freeze them for another 10 minutes.
  9. Cover this with more coating.
  10. Return them to the freezer until the chocolates are solid.
