    Buttermilk Waffles With Fresh Strawberry Compote [Vegan]

    Ingredients You Need for Buttermilk Waffles With Fresh Strawberry Compote [Vegan]

    For the Vegan Buttermilk: 

    • 1 1/2 cups oat milk
    • 1 tablespoon apple cider vinegar

    For the Waffles:

    • 2 flax eggs Mix 2 tbsp ground flaxseeds with 5 Tbsp water, let sit in the fridge
    • 3/4 cup all-purpose flour
    • 3/4 cup pastry flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 3 tablespoons sugar
    • 5 tablespoons vegan butter
    • 2 teaspoon pure vanilla extract

    For the Strawberry Compote: 

    • 1 lb fresh strawberries
    • 1/2 cup sugar
    • 1 lemon juiced

    How to Prepare Buttermilk Waffles With Fresh Strawberry Compote [Vegan]

    For the Strawberry Compote: 

    1. First, cut the strawberries into quarters.
    2. In a small saucepan with the heat on medium, add in the quartered strawberries, 1/2 cup of sugar, and juice from one lemon. keep stirring the mixture continuously until the sugar melts.
    3. Continue to cook the strawberries until it is tender and the compote has thickened.
    4. Towards the end of the cooking process, the mixture begins to bubble and the syrup is thickened, once done, allow the compote to cool.

    For the Waffles:

    1. Preheat your waffle iron.
    2. Prepare the vegan buttermilk by combining the oat milk and apple cider vinegar in a small mixing bowl, whisk, and set aside.
    3. In a large mixing bowl add the flours, baking powder, salt, and sugar to a medium bowl and mix well.
    4. Melt the butter in the microwave, then slowly add to the oat milk mixture, whisking while you pour it in. Add the flax egg and the vanilla extract, and mix well.
    5. Add the wet mixture to the dry mixture and mix well, until few lumps remain.
    6. Cook the waffles according to your waffle maker’s instructions.
    7. Plate the waffles and top them with the fresh strawberry compote, sliced berries, powdered sugar, and warm maple syrup.
