How to Prepare Buffalo Cauliflower Pizza With White Garlic Sauce [Vegan, Gluten-Free]
- Preheat the oven to 400°F. Chop one head of cauliflower into florets, drizzle with 1 tablespoon of olive oil, then sprinkle with salt and pepper. Spread evenly over a baking sheet and roast for 30 minutes, tossing once or twice throughout.
- In a small saucepan, whisk together hot sauce, Sriracha, vegan butter, and coconut milk over medium heat. Once the butter is melted and the sauce is hot, turn off heat and set aside. In a large skillet, drizzle 1 tablespoon of olive oil and add in diced yellow onion. Cook for 5-6 minutes, or until onion is translucent. Add in roasted cauliflower and top with the spicy sauce. Mix to coat all the cauliflower and onion in the sauce.
- In the meantime, make the white garlic sauce. Begin by drizzling 2 tablespoons of olive oil in a large skill. Add in 6 cloves of minced garlic and cook for 1 minute on medium-high heat. Add in 2 tablespoons of whole wheat flour and whisk together for 1 minute. Slowly add in the milk a little at a time, whisking as you pour. Also add in a generous pinch of salt and pepper. Continue to whisk until all the clumps are gone and a creamy white sauce is created.
- Turn the oven up to 425°F. Roll out your pizza dough onto a large baking sheet. Top the pizza dough with the white garlic sauce and spread evenly over the pizza to create a light coat. Next, spread the buffalo cauliflower evenly over the pizza, then fill in the "holes" with the steamed kale leaves. Bake for 12-15 minutes (follow your dough's recommended time). Once the pizza is cooked, top it with diced avocado and fresh chopped parsley. Slice and serve.
