Braised Soy Meatballs [Vegan]

Ingredients
For the Vegan Meatballs:
- 8 ounces soy minced meat
- 7 ounces oats, ground
- 4 cloves garlic, melted
- 2 onions, chopped
- 2 small carrots, grated
- 1 green pepper, chopped
- 4 sprigs mint, chopped
- salt and pepper
For Tomato Sauce:
- 26.5 ounces tomato juice
- 5 cloves garlic, melted
- 4 sprigs basil
- 6 tablespoons olive oil
- salt and pepper
Preparation
- Prepare the soy according to the instructions on the package. I put it squeezed in a bowl and throw the meatball vegetables inside. Mix.
- Add the oats and season with salt and pepper. Stir and then knead by hand. Leave the mixture in the refrigerator for 1 hour to tighten.
- Place the meatballs on a baking tray lined with parchment paper. Bake for about 1 hour at 390°F.
- Turn them when they turn brown on one side to cook better on the other. When they are ready, put them in the pot with the still hot sauce.
- While the dough is in the fridge, make the sauce.
- Put the tomato juice, a cup of water, the basil, and the garlic in a saucepan and cook over medium heat. Add salt and pepper.
- When the sauce thickens, add the oil and a little more basil. Let the sauce simmer. It should not become too thick. Serve with puree, rice, spaghetti, or gnocchi.
