Ingredients You Need for Braised Soy Meatballs [Vegan]

For the Vegan Meatballs:

  • 8 ounces soy minced meat
  • 7 ounces oats, ground
  • 4 cloves garlic, melted
  • 2 onions, chopped
  • 2 small carrots, grated
  • 1 green pepper, chopped
  • 4 sprigs mint, chopped
  • salt and pepper

For Tomato Sauce:

  • 26.5 ounces tomato juice
  • 5 cloves garlic, melted
  • 4 sprigs basil
  • 6 tablespoons olive oil
  • salt and pepper

How to Prepare Braised Soy Meatballs [Vegan]

  1. Prepare the soy according to the instructions on the package. I put it squeezed in a bowl and throw the meatball vegetables inside. Mix.
  2. Add the oats and season with salt and pepper. Stir and then knead by hand. Leave the mixture in the refrigerator for 1 hour to tighten.
  3. Place the meatballs on a baking tray lined with parchment paper. Bake for about 1 hour at 390°F.
  4. Turn them when they turn brown on one side to cook better on the other. When they are ready, put them in the pot with the still hot sauce.
  5. While the dough is in the fridge, make the sauce.
  6. Put the tomato juice, a cup of water, the basil, and the garlic in a saucepan and cook over medium heat. Add salt and pepper.
  7. When the sauce thickens, add the oil and a little more basil. Let the sauce simmer. It should not become too thick. Serve with puree, rice, spaghetti, or gnocchi.
