Banoffee ‘Nice’ Cream [Vegan, Gluten-Free]

Cooking Time

For the 'Nice' Cream:

  • 4 large bananas, frozen overnight
  • 2/5 cup of almond milk

For the Toffee Sauce:

  • 4.2 ounces of pitted dates
  • 1/2 lemon, juice only
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of coconut oil
  • 2/5 cup of almond milk

Toppings (optional):

  • Toasted oats
  • Coconut cream
  • Dark chocolate
  • Fresh chopped banana

  1. Pit the dates and place them into a food processor along with the lemon juice, vanilla extract, coconut oil, and 2/5 cup of almond milk. Whizz up until smooth.  This will take around 5-10 minutes on high. Depending on how you want the sauce, add more milk for a runnier consistency. Set aside.
  2. In a food processor/blender, whizz up the frozen bananas until smooth. Pop into a bowl.
  3. Drizzle over some of the homemade toffee sauce and finish with a drizzle of dark chocolate, walnuts, chopped banana, and chocolate.
