Everything you love about traditional apple pie, in an easy bar form! These Apple Oatmeal Bars are vegan AND gluten free, and will surely satisfy all your apple pie cravings.

Ingredients You Need for Apple Oatmeal Bars [Vegan, Gluten-Free]

Apple oatmeal bars:

  • 1 cup oats (rolled or quick)
  • 1 1/2 cup oat flour *
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1/2 cup maple syrup
  • 1/2 cup applesauce, unsweetened
  • 1 flax egg (1 tablespoon ground flax + 3 tablespoons warm water)
  • 1 teaspoon vanilla extract
  • 2 medium apples, sliced

Cinnamon oat topping:

  • 1/2 cup oats, rolled or quick
  • 1/2 cup oat flour
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon

How to Prepare Apple Oatmeal Bars [Vegan, Gluten-Free]

  1. Preheat oven to 350°F.
  2. For the flax egg, combine 1 tablespoon flax and 3 tablespoons warm water in a small bowl and set aside to thicken.
  3. Grease and line an 8x8 or 9x9 baking dish leaving overhang for easy removal.
  4. In a large bowl, combine all dry ingredients and stir to combine.
  5. Add all wet ingredients except the apples and stir until everything is incorporated.
  6. Add batter to your prepped pan, and press it down into the pan into an even layer.
  7. Layer apple slices on top of oat layer.
  8. Combine all crumble ingredients in a small bowl and mix until you have a course mixture. Sprinkle cinnamon oat mixture on top of apples.
  9. Bake in preheated over for about 30-32 minutes.
  10. Allow to cool in pan, then remove using parchment paper overhang.
  11. Allow to fully cool before cutting into 8 bars.
  12. Enjoy!

  1. I noticed when I found this recipe that it had no comments which usually makes me less willing to try a recipe so I thought I\’d add one. I made these Sunday for a brunch party and they were delicious! Perfectly moist and flavorful and VERY easy to make. I reduced the maple syrup by about a 1/3 and used a regular egg since I was out of flax seed and we\’re not vegan. I was also too lazy to slice apples and layer them over the spread-out batter so I just cubed them and mixed them right into the batter. The crumb topping will adhere much better if you don\’t do that but they were still perfect!
