Austrian startup Revo Foods has unveiled a groundbreaking innovation: “THE KRAKEN – Inspired by Octopus,” the world’s first plant-based alternative to octopus tentacles. Crafted from fungi protein using a new 3D structuring approach, this revolutionary product promises to deliver an authentic taste, texture, and scent akin to traditional octopus dishes.
The decision to develop a plant-based octopus alternative stems from a desire to offer sustainable options without compromising on taste or texture. CEO Robin Simsa explains, “It is a very interesting product for which no plant-based alternative exists yet [we checked and found one obscure product available which does not appear to offer realistic properties], and has a very unique texture and structure. Also, it is a specialty in many countries, but an increasing amount of people are aware of the high intelligence and social behavior of these animals, therefore providing a suitable alternative is important.” Additionally, “THE KRAKEN” offers a Nutriscore A nutritional profile, boasting high levels of omega-3 fatty acids and fiber. Whether grilled, fried, baked, or enjoyed straight out of the package, this mycoprotein-based creation promises to satisfy even the most discerning palates.
