Vegan meals are amazing and can be even more satisfying than meals made with animal products. However, it may take some time to get the hang of vegan cooking before you start to make amazing meals. It is a learning curve, much like anything else.

If your vegan food is tasting a bit drab and bland, there might be a few causes. These are pretty common even amongst those who eat animal products! Once you start to follow these tips, you should see a very noticeable improvement in how your food tastes. But give it time, cooking is a skill that must be practiced. Once you have learned more about it, it will get even easier.

1. You’re Not Seasoning Your Vegan Food

Possibly the number one reason why vegan food, or any food for that matter, doesn’t taste good, is that it’s not seasoned. Seasoning is an incredibly important step in creating any dish. The food is only going to be as good as it has been seasoned. Otherwise, it is going to be bland and lifeless. Even with animal products, people are always marinating or dressing their dishes up with condiments, herbs, and spices.

Possibly the most important seasoning is salt because salt brings out the flavor in things. You don’t want to use too much salt, but you do need to generously salt your food. One tip is to only salt your food after it has finished cooking as some of the salt gets cooked down if you add it before or while cooking. 

Another valuable seasoning, which can be used on a wide variety of dishes, is garlic powder.

For those looking for a cheesy taste to their meal, nutritional yeast is a lifesaver for many vegans.

If you don’t feel confident seasoning your food, buy some seasoning blends. These will help you to start seasoning and get the hang of combining flavor profiles. Eventually, you will get the hang of it and be able to season on your own with fresh seasonings.

2. You’re Not Cooking the Right Way

There are rules to cooking. Some are meant to be broken, while others really should stay as a rule.

One of these very important rules is to get color on your food when you are cooking. This golden color is the condensed flavor that you want in your food. By searing and sauteing food, we get a caramelization that gives you dish an amazing flavor.

One dish that people skip this step with is soups. You want to sauté your veggies before creating your soup. If you don’t, you will end up with a weak-tasting broth that is downright flavorless.

Don’t be afraid of adding color to your food as long as you are watchful nothing will burn. That color is important and also gives texture, making food more pleasurable to eat.

Roasting food is also a way to get a bunch of flavors in a short amount of time. This is why many soups call for roasted veggies.

3. You’re Not Recreating Flavors

When you start to cook vegan food, you have to start where you know. This is often starting with non-vegan dishes that you use to eat, and recreating them into vegan versions. By starting with dishes that you already know and love, you have somewhere to jump off of. You can’t recreate the recipe exactly, of course, but you can try to. This can be your baseline for making delicious and flavorful food.

For example, instead of using beef for your sloppy joes, you could incorporate lentils or textured vegetable protein. Or instead of using dairy milk and eggs for your French toast, you could use oat milk and chia seeds. You’ll find that there’s a variety of alternatives for every animal-derived ingredient!

4. You’re Not Cooking Fresh Vegan Food

If you are just starting to make vegan food, you might not be using the best ingredients. Like many things, vegan dishes are only going to be as good as the ingredients that you use. This is why it is important to try to use fresh and high-quality ingredients whenever possible. You don’t want to skip this step.

Certain types of frozen fruits or canned vegetables can be eaten when they are not fresh and still taste good. But generally, it is best to try to cook with fresh food.

Fresh food is the most flavorful and has the best texture, which helps to create dishes that are well-rounded and satisfying.

Fresh ingredients can also be cooked in ways that frozen or canned goods cannot, giving them a major advantage when it comes to creating a variety of vegan meals.

5. You’re Not Experimenting

If your vegan food tastes bland all of the time and everything seems to taste the same. You might not be experimenting enough with your food combinations. We can all get stuck in a food rut and eat the same boring meals every day. But you don’t have to get that way if you try to learn the basic skills of cooking.

Learning how to make a variety of meals can also help you to stay away from tasteless food. Sometimes we can start to make food that we don’t even like just because it is easy and fast. 

To avoid eating bland vegan meals, you need to learn the basics and master a few meals. Then you can make these meals on repeat without having to sink into eating unsatisfying food.

Try to grab a few new foods every time you go get groceries. Grab a new spice or seasoning to try. These kinds of habits will help you to always be creative with your food so that it will always taste exciting and delicious!
