The savory is stuffed with typical burrito filling: black beans, pico de gallo, spinach, and avocado, then topped with everything bagel seasoning.

Ingredients You Need for Sweet and Savory Breakfast Sweet Potato Boats [Vegan, Gluten-Free]

For the Sweet Breakfast Sweet Potato Boat:

  • 1 baked sweet potato
  • Drizzle of almond butter
  • 1/2 banana, sliced
  • 1/4 cup granola
  • Dried mulberries
  • Goji berries
  • Shredded coconut
  • Sprinkle of pumpkin pie spice (or cinnamon)

For the Savory Breakfast Sweet Potato Boat:

  • 1 baked sweet potato
  • 1/4-1/3 cup black beans
  • 1/4 cup fresh spinach
  • 1 tablespoon pico de gallo
  • 1/4 avocado, sliced
  • Approximately 1 ounce vegan cream cheese, plus 1 tablespoon water
  • Everything bagel seasoning

How to Prepare Sweet and Savory Breakfast Sweet Potato Boats [Vegan, Gluten-Free]

To Bake the Sweet Potatoes:

  1. Thoroughly wash and prick your sweet potatoes each 2-3 time with a fork or knife. Wrap them in parchment paper and then with foil, then place them directly on the oven rack in the middle of the oven. Turn the oven on to 425°F and bake for 40 minutes or until sweet potatoes are soft. Cool before using.

To Make the Sweet Breakfast Sweet Potato Boats:

  1. Add in all of the ingredients, adjusting the ratios as desired, and dig in.

To Make the Savory Breakfast Sweet Potato Boats:

  1. Whisk the cream cheese with water in a small bowl until smooth and set aside. Add in the spinach, black beans, pico de gallo and avocado, then drizzle with the cream cheese as desired, and top with everything bagel seasoning.
