Stir-fried cauliflower with tomato sauce is a simple dish of cauliflower stir-fried with tomatoes and garlic, a really nice side dish with a really good flavor. Picking the right tomatoes is the key to this dish so that the natural flavors of cauliflower would come out, which means Roma tomatoes or something similar would be the perfect ingredient to use, its tangy sweet natural flavor when it seeps through the florets enhances its nutty flavor. This dish is usually found in Chinese restaurants but it’s not as popular as most of their stir-fries.

Stir-Fried Cauliflower in Tomato Sauce [Vegan, Gluten-Free]

Ingredients

  • 1 head cauliflower, cut into florets
  • 2 Roma tomatoes, chopped
  • 3tablespoons tomato paste
  • 1 tablespoon sweetener of choice
  • 1 tablespoon chopped parsley, plus more to garnish
  • 4 cloves garlic, sliced
  • Salt
  • Freshly ground black pepper
  • Oil

Preparation

  1. Prepare a pot with boiling water then blanch cauliflower for 2 minutes. Drain cauliflower then rinse in running cold water to stop it from cooking, set aside.
  2. Prepare a wok add oil then sauté garlic, once its light brown and fragrant add the chopped tomatoes and stir fry until it turns soft and easily mashed, add the tomato paste and chopped parsley then continue to cook for a minute.
  3. Add the cauliflower then stir fry for 5 minutes adding a bit of water just to give it some moisture, add the sweetener as well then season it with salt and freshly ground black pepper.
  4. Remove from wok then serve garnished with chopped parsley on top.
