How to Prepare Stir-Fried Cauliflower in Tomato Sauce [Vegan, Gluten-Free]
- Prepare a pot with boiling water then blanch cauliflower for 2 minutes. Drain cauliflower then rinse in running cold water to stop it from cooking, set aside.
- Prepare a wok add oil then sauté garlic, once its light brown and fragrant add the chopped tomatoes and stir fry until it turns soft and easily mashed, add the tomato paste and chopped parsley then continue to cook for a minute.
- Add the cauliflower then stir fry for 5 minutes adding a bit of water just to give it some moisture, add the sweetener as well then season it with salt and freshly ground black pepper.
- Remove from wok then serve garnished with chopped parsley on top.
