How to Prepare Cranberry Coconut Energy Bars [Vegan, Gluten-Free]

  1. Pulse cashews in a food processor until they are finely ground.
  2. Add other ingredients and pulse until a dough forms. Add more water if the mixture isn't coming together.
  3. Press into the bottom of n 8x8-inch pan lined with parchment paper and freeze for an hour or refrigerate overnight to set.

  1. I made these yesterday for a vegan group potluck and came home with an empty pan. They were good. I had to grind the cashews in two batches because I have only a mini food processor. I eventually used my electric mixer to blend the whole batch in a big bowl – that seemed sufficient. I was concerned because I had to remove them from the freezer after only 45 minutes, but they held together well. I used a plastic rice cooker spoon to break them apart in the non-stick pan and that worked out just fine.
