Tater Tot Casserole [Vegan]
Tater tots are great stand-ins for hash browns, making this casserole a hearty breakfast option for cold winter mornings, but I’m known to make it for dinner, too! It’s hearty, packed with protein, and deliciously satiating. Excerpted from Plant-Based on a Budget: Quick and Easy (BenBella Books).

How to Prepare Tater Tot Casserole [Vegan]
- Preheat the oven to the temperature directed on your tater tots package.
- In a large skillet, heat the oil over medium heat. Add the bell pepper, onion, and garlic and sauté, stirring occasionally, until the bell pepper and onion are tender, 5 to 7 minutes.
- Using your fingers, crumble the tofu into the skillet. Add the turmeric, salt, and pepper and mix thoroughly. Cook until the flavors are melded together, 3 to 5 minutes.
- Transfer the tofu mixture to an 8-inch square baking pan and cover the top with the frozen tater tots.
- Bake for the time directed on the tater tot package (usually 20 to 25 minutes). If they are not golden brown, you can bake a little longer, checking in 5-minute increments, until they reach your desired crispness.
Notes
Swap the oil for 1/2 cup vegetable broth or water. Swap the fresh bell pepper for 1 cup sliced frozen bell pepper. To make it creamier and eggy, add 1 1/2 tablespoons vegan butter in step 3. Make it heartier by adding sliced vegan breakfast sausage in step 2. Sprinkle vegan cheese on the tofu mixture in step 4 before adding the tater tots.
