Ingredients

  • 1.5 pounds sweet potatoes
  • 3/4 cup gluten-free old fashioned oats
  • 1 1/4 cup almond milk
  • 1 1/4 cup light brown sugar
  • 1/2 cup cocoa powder
  • 1 cup creamy peanut butter
  • 1 teaspoon salt
  • Vegan mini chocolate chips

Preparation

  1. Pierce the potatoes with a fork and wrap them in a wet paper towel. Microwave them until fully cooked, about 8-10 minutes.
  2. Preheat oven to 400°F and line and 8×8-inch pan with parchment paper.
  3. Combine all ingredients, minus the chocolate chips, in a blender until a smooth, even consistency is reached.
  4. Pour the batter into your prepared pan and smooth it out. It will be really thick and sticky.
  5. Sprinkle the chocolate chips over the batter (as many or as few as you like).
  6. Bake for 50 minutes.
  7. Allow to cool completely before cutting.
