Guacamole is one of my favorite avocado based starters, but this stuffed avocado shells recipe is equally if not more appetizing, especially if you want to prepare something that will impress at a dinner party. There´s also some lime and dill in there, which give the dish a really fresh taste (perfect for hot summer days).

Ingredients You Need for Stuffed Avocado Shells [Vegan]

  • 1 ripe avocado
  • dill
  • 1 tsp cumin seeds
  • juice from half a lime
  • half a red pepper
  • 1/4 onion
  • 2 tbsp cooked chickpeas
  • olive oil
  • salt

How to Prepare Stuffed Avocado Shells [Vegan]

  1. Cut the avocado in half, and carefully scoop out the flesh from the shell.
  2. Put all the ingredients in a food processor, and process until the mixture resembles a dip.
  3. Fill the avocado shells with the mixture, and garnish with lime slices.
