I played around with different flavors and ingredients and eventually settled on this super delicious strawberry version which is basically a blended chia pudding. I was going to go with just the pudding until one morning I added the leftovers of one of the batches to my morning oats. BOOM! The once pudding recipe transformed into so much more.
Strawberry Protein Pudding Breakfast Parfait [Vegan]

Ingredients
For the Pudding:
- 3/4 cup almond milk
- 2 tablespoons chia seeds
- 1 scoop vanilla plant-based protein powder (or plant-based protein powder of choice)
- 4 fresh strawberries, sliced
For the Oatmeal:
- 1/2 cup rolled oats
- 3/4 cup liquid of choice (milk or water)
- Shake cinnamon
- Maple syrup (optional)
Preparation
For the Oatmeal:
- Prepare according to package directions. Add cinnamon and maple syrup, if using, to desired taste preference. Set aside.
For the Pudding:
- Add the almond milk, chia seeds, protein powder and strawberries to a high-speed blender. Blend on high until chia seeds are broken down and the mixture is smooth.
- Pour pudding into a container, cover, and chill in the fridge for 1 hour to overnight to allow to thicken.
- When pudding has thickened, spoon over top of cold oats or warm them slightly before. Top with extra strawberries and chia seeds, if desired.
