I played around with different flavors and ingredients and eventually settled on this super delicious strawberry version which is basically a blended chia pudding. I was going to go with just the pudding until one morning I added the leftovers of one of the batches to my morning oats. BOOM! The once pudding recipe transformed into so much more.

Strawberry Protein Pudding Breakfast Parfait [Vegan]

Ingredients

For the Pudding:

  • 3/4 cup almond milk
  • 2 tablespoons chia seeds
  • 1 scoop vanilla plant-based protein powder (or plant-based protein powder of choice)
  • 4 fresh strawberries, sliced

For the Oatmeal:

  • 1/2 cup rolled oats
  • 3/4 cup liquid of choice (milk or water)
  • Shake cinnamon
  • Maple syrup (optional)

Preparation

For the Oatmeal:

  1. Prepare according to package directions. Add cinnamon and maple syrup, if using, to desired taste preference. Set aside.

For the Pudding:

  1. Add the almond milk, chia seeds, protein powder and strawberries to a high-speed blender. Blend on high until chia seeds are broken down and the mixture is smooth.
  2. Pour pudding into a container, cover, and chill in the fridge for 1 hour to overnight to allow to thicken.
  3. When pudding has thickened, spoon over top of cold oats or warm them slightly before. Top with extra strawberries and chia seeds, if desired.
