Ingredients You Need for Spicy Crunchy Cauliflower Nuggets [Vegan]

For the Cauliflower:

  • 1 head of cauliflower
  • 1 1/3 teaspoons smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 a jalapeño pepper
  • 3 tablespoons flour
  • 3/4 cup water
  • Salt and pepper, to taste

For the Breading:

  • 1/2 cup bread crumbs
  • 1/2 cup peanut flour

For the Sauce:

  • 1 tomato
  • 1/2 a jalapeño pepper
  • 6 tablespoons ketchup
  • Salt and pepper, to taste

How to Prepare Spicy Crunchy Cauliflower Nuggets [Vegan]

  1. Wash the cauliflower, chop it into large florets, and add to a pot of boiling water. Let cook until "al dente," about 5 minutes.
  2. Mix the flour with water and add 1/3 teaspoon paprika. Dice half of a jalapeño pepper and add it to the flour mixture.
  3. Once the cauliflower is cool enough to handle, chop each large floret into about 3 pieces. Season with smoked paprika, cayenne pepper, salt, and pepper.
  4. In a bowl, combine peanut flour with bread crumbs. Roll each cauliflower floret in the mixture until thoroughly coated.
  5. Preheat the oven to 390°F.
  6. Set up a plate and cover with a paper towel. Add enough oil to cover the bottom of a skillet and fry each floret until golden brown, then place onto the paper towel to drain excess oil.
  7. Transfer the cauliflower to a baking sheet and bake in the oven for 10 minutes.
  8. Make the sauce by combining all ingredients in a blender until smooth.
  9. Serve the cauliflower wings warm with sauce on the side.
