How to Prepare Speculaas Cheesecake [Vegan, Gluten-Free]
- In a mixer, cream the sugar and vegan butter for at least 5 minutes. In a small bowl, combine the soy flour with 1/2 cup, plus 2 tablespoons water. In another small bowl, mix the agar agar and water and allow to set.
- In a large bowl, combine the soy flour mix, agar agar mix, baking powder, milk, butter/sugar mix, and speculaas spice. Stir to combine. Preheat oven to 335°F.
- Pour the dough into a 9-inch baking dish or springform pan and let bake for about 20 minutes. Let cool.
- Combine the powdered sugar and cream cheese using an electric whisk. Spread over the crust and sprinkle with cinnamon.
