Ingredients You Need for Speculaas Cheesecake [Vegan, Gluten-Free]

For the Crust:

  • 1 3/4 cups, plus 1 1/2 tablespoons gluten-free flour
  • 3/4 cups cane sugar
  • 2/3 cup vegan butter
  • 1/4 cup agar agar whisked with 1/4 cup water
  • 1/4 cup, plus 2 tablespoons soy flour
  • 1/2 cup, plus 2 tablespoons water
  • 2 1/2 teaspoons baking powder
  • 1/2 cup, plus 1 teaspoon non-dairy milk
  • 2 teaspoons speculaas/gingerbread spice

For the Filling:

  • 4/5 cup powdered sugar
  • 5/8 cup vegan cream cheese
  • 1/2 teaspoon lemon juice
  • Zest of half a lemon

For Decoration:

  • 2 tablespoons cinnamon

How to Prepare Speculaas Cheesecake [Vegan, Gluten-Free]

  1. In a mixer, cream the sugar and vegan butter for at least 5 minutes. In a small bowl, combine the soy flour with 1/2 cup, plus 2 tablespoons water. In another small bowl, mix the agar agar and water and allow to set.
  2. In a large bowl, combine the soy flour mix, agar agar mix, baking powder, milk, butter/sugar mix, and speculaas spice. Stir to combine. Preheat oven to 335°F.
  3. Pour the dough into a 9-inch baking dish or springform pan and let bake for about 20 minutes. Let cool.
  4. Combine the powdered sugar and cream cheese using an electric whisk. Spread over the crust and sprinkle with cinnamon.
