  • 1/2 cup cashews
  • 1 apple, sliced
  • 1 onion, diced or sliced
  • 1 15-ounce can chickpeas
  • 1 pound potatoes
  • 1 cup quinoa
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Herbs of your choice, for garnish

How to Prepare Skillet Potatoes With Chickpeas and Roasted Apples [Vegan]

  1. Cook the quinoa according to manufacturer's instructions.
  2. In the meantime, peel and dice the potatoes and onion.
  3. Heat the oil in a skillet and add onions. Cook them over high heat for 2-3 minutes. Then add the potato dices, season with salt and pepper, and cook until they are crispy.
  4. Finally, briefly roast the apple slices.
  5. Serve the potatoes on the quinoa and chickpeas and top with apples and herbs. Add sauce of your choice.

  1. What a terrible recipe! Steps are missing… what bout the cashews? How about the sauce? Really, better to not publish at all than to publish this.

  2. Half the steps are missing, and even the ones that are included don\’t even describe the process properly. What do I do with the cashews? How do I roast the apples? How long do I cook the potatoes? The description says ready in 20 minutes, but the potatoes are not cooked in that amount of time.

    Other comments say you are contacting the \’blogger\’ but honestly you should just take down this terrible recipe already until you get an actual method to go with the pretty picture. It\’s rubbish.
