Ingredients You Need for Savory Sweet Potato Patty [Vegan]

  • 2 tablespoons chia seeds
  • 6 tablespoons warm water
  • 2 cups sweet potato, cooked and mashed
  • 1/2 cup oats
  • 2 tablespoons nutritional yeast
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • A handful of coriander, dill, or any of your favorite fresh herbs, minced
  • 2 tablespoons extra virgin olive oil
  • Juice from 1/2 a lemon

How to Prepare Savory Sweet Potato Patty [Vegan]

  1. Prepare the chia "eggs" by adding the chia seeds and water to a bowl and letting it sit, about 10 minutes.
  2. Add the rest of the ingredients to a large bowl and stir well, but do not over stir it.
  3. Add the chia eggs to the mixture.
  4. Preheat a pan over high heat and spray with coconut spraying oil to coat the pan.
  5. Decide on your desired shape of pancakes and dollop the mixture onto the pan. Let each side cook for 1-2 minutes, or just until crispy, before cooking the next patty.
  6. Serve with whatever you like.
