Ingredients

  • 7-ounces of chestnuts cooked in the fire
  • 1 shallot
  • 2-ounces of hazelnuts
  • 3-4 dried shiitakes
  • 5-ounces of vegan cream 
  • 2 tablespoons of tamari
  • 1 tablespoon of dairy-free yogurt
  • 1 tablespoon white wine
  • 1 stem of rosemary
  • Nutmeg
  • Pepper and salt
  • Vegetable oil

Preparation

  1. Mince the shallot and brown in a pan with vegetable oil.
  2. Meanwhile, rehydrate the shiitakes in boiling water.
  3. Place all the ingredients with the drained shiitakes in a blender, keeping the soaking water for later.
  4. Mix until you obtain a creamy consistency. Add soaking water if necessary.
  5. Taste and add seasoning as needed and refrigerate until use.
