Ingredients You Need for Raw Chocolate Cookies With Cheesecake Filling [Vegan]

For the Cookies:

  • 1/4 cup almond flour
  • 1/4 cup oatmeal flour
  • 1/4 cup tapioca starch
  • 1/4 cup chestnut flour
  • 2 tablespoons raw cacao powder
  • 2 tablespoons dark cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla bean powder
  • A pinch of salt
  • 2 tablespoons coconut oil
  • 2 tablespoons maple syrup
  • 2-6 tablespoons non-dairy milk

For the Filling:

  • 1/2 cup almonds and cashews together, soaked 2-12 hours
  • 2 tablespoons coconut oil
  • 2 tablespoons cashew nut butter
  • 5 tablespoons cacao butter
  • 3 Medjool dates, pitted and soaked
  • 1 tablespoon maca powder
  • 1 tablespoon lucuma powder
  • A pinch of salt
  • 1/2 teaspoon vanilla bean powder
  • 6 tablespoons full-fat coconut cream, chilled

How to Prepare Raw Chocolate Cookies With Cheesecake Filling [Vegan]

To Make the Cookies:

  1. Mix the dry ingredients in a bowl.
  2. Add the coconut oil, maple syrup, and non-dairy milk. Add the milk in small amounts until the dough is non-sticky, smooth, and easily shaped.
  3. Roll the dough fairly thick. Use cookie cutter for shaping the cookies.
  4. Put the cookies on a baking sheet covered with parchment.
  5. Bake cookies at 356°F for 12-18 min depending on the oven.
  6. Let the cookies cool down before filling.

To Make the Filling:

  1. Blend the soaked cashews, drained cashews, and almonds with a blender until very smooth.
  2. Add the rest of the ingredients except for the melted cacao butter and coconut oil and blend well. Add the cacao butter and coconut oil carefully and blend again.
  3. To make sandwich cookies, pipe or spread 1 tablespoon of filling onto the flat side of half the cookies. Top with another cookie pressing gently.
