Cooking Time



  • 1 red onion finely diced
  • 1 garlic clove finely diced
  • 2 thumb sized piece of ginger finely diced
  • 1 carrot finely chopped
  • 1 broccoli head chopped into small florets
  • pepper sliced
  • 1 lime
  • handful fresh coriander (optional)
  • tablespoon peanut butter
  • 2 tablespoon tamari
  • 1 teaspoon sesame oil
  • 8 ounces rice noodles


  1. First chop up the vegetables as instructed above.
  2. Heat a pan with sesame oil adding in the onion, garlic, ginger, carrot, pepper, broccoli and fry for 5 minutes until softening.
  3. Meanwhile place your rice noodles on a boil (follow packet instructions).
  4. To a small mixing bowl add the peanut butter, tamari, sesame oil along with the juice of 1/2 a lime and 1 tablespoon water (add more if it’s not liquid enough).
  5. Simply drained and add the cooked noodles to the pan along with a handful of freshly chopped coriander (optional) and the remaining 1/2 juice of lime and mix.
  6. Serve with fresh lime, extra coriander and sesame seeds (optional).
