This quiche is perfect for brunch and to share with friends!

Quiche [Vegan]

  • 16 ounces liquid vegan egg
  • 1 vegan pastry pie shell
  • 1.5 cup mushrooms, sliced
  • 1 cup onion, chopped
  • 1/2 cup cherry tomatoes, sliced
  • 1 cup vegan cheese
  • A handful of baby spinach
  • 1 Tablespoon olive oil


  1. Bake pastry pie shells according to package
  2. Preheat oven to 375F
  3. Heat oil in a pan. Add onions and saute 2-3 min
  4. Add in mushrooms and saute until tender
  5. Add Spinach, cherry tomatoes, mushrooms, onions into pie crust
  6. Top mixture with vegan cheese
  7. Pour the liquid vegan egg evenly over the mixture
  8. Bake for 40-45 minutes, or until the middle of the quiche is set
  9. Remove from oven and allow quiche to cool for 15 minutes before serving
