How to Prepare Qalayet Bandura (Tomato Garlic Skillet) [Vegan]
- To a skillet, add the olive oil followed by the minced garlic cloves. Cook on medium heat for 2 to 4 minutes, until the garlic becomes fragrant and lightly browned.
- At this point, add in the tomatoes and toss with the olive oil and garlic. At first, they will appear chunky, but they will cook down and lose their structure.
- For a little heat, add the jalapeño to the pan. Stir with the other ingredients and season with salt and pepper.
- Allow all the flavors to cook together, covered, for 10 to 13 minutes on medium heat until the tomato chunks are broken down. Cook uncovered for another 2 to 5 minutes so it thickens slightly. Taste to see if any more seasoning is necessary, and enjoy this simple and delicious Palestinian dish with some fresh pita bread to dip.
