- 1/3 cup melted coconut oil
- 1/3 cup pumpkin puree
- 1/4 cup maple syrup
- 2 tablespoons creamy almond butter
- 1 1/2 teapoons pumpkin spice
- 2 cups rolled oats
- 1/2 cup walnuts
- 1/2 cup coconut flakes
- 1/4 cup pumpkin seeds
- Pinch of flaky sea salt
Preparation
- Preheat the oven to 350°F.
- Line a baking sheet with a silicone baking mat or parchment paper.
- In a large bowl, whisk together melted coconut oil, pumpkin puree, maple syrup, and almond butter until smooth. Add pumpkin spice, oats, walnuts, coconut flakes, pumpkin seeds, and salt. Use a wooden spoon or spatula to combine. Spread granola in an even layer onto the prepared baking sheet.
