Ingredients You Need for Paleo Banana Biscuits [Vegan, Gluten-Free]

  • 3/4 cup sunflower seed meal
  • 1/4 cup tapioca starch
  • 1/4 cup coconut flour
  • 1/4 cup potato starch
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon pure stevia powder
  • 1/2 teaspoon nutmeg
  • 1 teaspoon pvanilla
  • 2 teaspoons coconut milk
  • 2 large puréed bananas
  • 1/4 cup melted coconut oil

How to Prepare Paleo Banana Biscuits [Vegan, Gluten-Free]

  1. Preheat the oven to 375°F.
  2. Place 1 cup of roasted, salted sunflower seeds into a blender and blend them until fine crumbles form.
  3. Add all the dry ingredients to a large mixing bowl and stir well.
  4. Puree the bananas in a blender until smooth.
  5. Combine the wet ingredients, except the coconut oil, in a small mixing bowl.
  6. Add the wet ingredients to the dry ingredients and mix them well.
  7. Add the coconut oil last and fold it in.
  8. With a large mixing spoon, form into 5-6 large biscuits and place them onto a lightly greased baking pan.
  9. Bake at 375°F for 20 minutes.
