Tangy and fruity, this lime and strawberry cake doesn't disappoint. It's set on a sticky date-macadamia crust, and the combination of cashews and coconut oil makes for an absolutely divine texture. Top with chopped pistachios and raspberries for beautiful presentation.
No-Bake Lime Strawberry Cheesecake [Vegan, Gluten-Free]
Ingredients
For the Crust:
- 1 1/2 cup macadamias or almonds, soaked in water for at least 8 hours, then drained
- 3/4 cup dates, pitted and diced
For the Lime Layer:
- 2 cups cashews, soaked in water for at least 4 hours, then drained
- 1/2 cup dates, pitted
- 1/2 cup water
- 1/3 cup lime juice
- Zest from 3 small limes
- A handful of baby spinach leaves (optional)
- 1-2 tablespoon coconut oil (optional)
For the Strawberry Layer:
- 3 cups strawberries
- 1 cup cashews, soaked water for at least 4 hours, then drained
- 1/2 cup dates, pitted
- 1 tablespoon coconut oil (optional)
For Garnish:
- Raspberries
- Chopped pistachios
Preparation
- For the crust, pulse the macadamias in a blender to fine crumbles and transfer to a medium-sized bowl. Then pulse the dates to fine crumbles and add to the bowl.
- Mix well. It should form a relatively sticky dough. If too dry, add a little extra water. Line springform pan with baking paper, scoop dough into springform and spread evenly.
- For the lime layer, blend all ingredients until smooth. You might need to scrape the mixture down the sides or use tamper. Only add a little extra water if the mixture won’t blend at all.
- Pour the lime layer into the springform and spread evenly. Place in freezer while preparing the strawberry layer.
- For the strawberry layer, blend all ingredients until smooth. You might need to scrape the mixture down the sides or use tamper. Only add a little extra water if the mixture won’t blend.
- Carefully pour the strawberry layer over the lime layer and spread evenly. Garnish with raspberries and chopped pistachios.
- Place in freezer until set. Let defrost in the refrigerator for a bit before slicing and serving.
