Ingredients You Need for Mini Coffee Monkey Bread [Vegan]

For the Monkey Bread:

  • 1 16-ounce package of prepared dough

For the Coffee Coating:

  • 1 cup almond milk
  • 8 tablespoons vegan butter
  • 1 teaspoon pure vanilla extract
  • 1/2 cup coffee grounds
  • 1 cup almond milk
  • 1 cup coconut sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt

For the Sugar Coating:

  • 1 cup coconut sugar
  • 2 tablespoons cinnamon
  • 1/3 cup coffee grinds

For the Icing:

  • 1 cup powdered sugar
  • 1 tablespoon almond milk

How to Prepare Mini Coffee Monkey Bread [Vegan]

  1. Heat the almond milk, coconut sugar, salt, and vegan butter in a small saucepan over low heat until the butter is just melted.
  2. Remove from heat and add vanilla and coffee grinds, combine, set aside to cool until warm to the touch. Form the dough into small balls and dip into the butter/coffee mixture and place in a muffin tin.
  3. Combine the sugar coating ingredients in a bowl and then sprinkle on top of the monkey bread.
  4. Bake for 25 minutes or until lightly golden. Cool for 5 minutes on a cooling rack. To top with icing simply wait until they are completely cooled then combine the ingredients and drizzle it on.

Hi; 2 quick questions: 1) Prepared dough – do you recommend crescent, pizza, puff pastry or another specific type of pre-prepared dough? 2) Coffee Coating section lists almond milk twice – are you instructing a total of 2 cups of almond milk, or should we disregard the 2nd listed almond milk?
