Maple Glazed Cinnamon Pecan Mini Cakes [Vegan]




Cooking Time




For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon corn starch
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 5 tablespoons pecan pieces

For the Wet Ingredients:

  • 3/4 cup soy milk
  • 1/2 teaspoon apple cider vinegar
  • 1/4 cup soy yogurt
  • 1 teaspoon vanilla extract or paste
  • 1/4 cup granola oil

For the Filling:

  • 1 tablespoon granulated sugar
  • 1 teaspoon cinnamon
  • 5 tablespoons pecan pieces

For the Glaze:

  • 2 tablespoons vegan butter
  • 3 1/2 tablespoons maple syrup
  • 1/2 cup confectioner's sugar


  1. Preheat oven to 350°F.
  2. Add all wet ingredients in a bowl and mix well.
  3. In another bowl, combine all the dry ingredients, add the wet ingredients, and whisk until the mixture is smooth and well combined.
  4. To make the filling, combine the sugar, cinnamon, and pecan pieces until well mixed.
  5. Spoon half the batter into well greased mini bundt cake pans until the pans are half full.
  6. Pour the cinnamon-sugar-pecan filling mix over the batter.
  7. Use the rest of the batter to fill up the pans (about 3/4 full).
  8. Bake for 30 minutes or until a toothpick comes out clean.
  9. Cool in pans on a wire rack 10 minutes; remove cakes from pans. Cool completely on wire rack.
  10. Now, make the glaze. In a small saucepan over low heat, melt the butter and maple syrup together, whisking occasionally.
  11. Once the butter has melted, remove from heat and whisk in the sifted confectioner's sugar. Set glaze aside and allow to cool and thicken.
  12. Glaze your mini cakes and decorate with more pecans.
