Ingredients

  • 1 15-ounce can lentils
  • 1/4 cup olive oil
  • 1/3 cup cashew butter
  • Salt and pepper to taste
  • 2 garlic cloves
  • 1 onion, finely chopped

Preparation

  1. Add cooked lentils, olive oil, cashew butter, and garlic to a blender or food processor. Season with a good pinch of salt and pepper. Process until smooth.
  2. While the blender is running heat a large skillet with a small splash of olive oil and briefly fry the onions at medium heat until they are slightly brown. Transfer the smooth mixture from the blender to a bowl and fold in the onions.
